French macarons (pronounced mack-a-ROHNS) – not to be confused with macaROONS (which are coconut lump cookies) – are delicate meringue cookies sandwiched with different fillings in between. They have a crisp exterior with a chewy interior that are naturally gluten free. The base ingredients DO include almond flour and eggs for those with allergies.
